Chicken Kohlrabi Salad

A great summer salad for those days where you don't feel like being in front of the stove for very long. Mix in all the chopped veggies along with the chicken. Whisk the vinaigrette separately, then had to the chicken mixture. Let sit in the fridge for an hour or two to let the flavors marry.

1 medium carrot peeled and julienned

½ medium kohlrabi peeled and julienned

1 tbsp thai basil - julieene

1 tbsp mint - chopped

1 Serrano or asian chile, thinly sliced

2 chicken breast, shredded (bring to a boil with either chicken stock or water, just enough to cover, along with sliced ginger, salt, pepper. Once at a boil, reduce heat to a simmer and allow to go until cooked through approx 15 min depending on the size of the portions. Then shred)

Vinaigrette with a few Asian flavors

3 tbsp olive oil

2 tbsp rice wine vinegar

1 tbsp of lemon or lime juice

1 tsp low sodium soy sauce

1 tsp honey

1 tsp sesame oil

a couple of dashes of hot sauce
