Harissa Spiced Chicken


1 whole chicken cut into 8 pieces

2 limes

2 tsp harissa powder

Salt and Pepper to taste

2 tbsp olive oil

1 medium sized yellow onion - small diced

1 medium carrot - peeled and small diced

2 celery stalks - small diced

1 tsp garlic - minced

1 tbsp tomato paste

1 cup of dry white wine

1 cup of chicken stock

2 tbsp fresh parsley - chopped

2 roma tomatoes - small diced

Order of Operation (Braising)

  1. Place chicken in a bowl, cut limes in half and squeeze juice over the chicken

  2. Mix in Harissa, salt and pepper to chicken, ensuring that all pieces are thoroughly covered

  3. Cover bowl with plastic wrap and place in refrigerator for 2 hours (overnight works best)

  4. Preheat oven to 350 degrees F

  5. In an oven proof heavy bottom pan (dutch oven) over medium-high heat, add in the olive oil, allow to become hot

  6. Add in chicken skin side down, and saute until golden brown (be sure not to crowd the pan, do this step in a couple of batches if necessary), about 5 minutes

  7. Flip chicken over and cook for an additional 2 to 3 min, then remove to a platter (note the chicken won’t be cooked through, we are just browning at this stage so we’re looking to build flavor)

  8. Remove chicken from pan, if needed add in more olive oil, add in onions and saute until translucent, stirring periodically - 2 to 3 minutes

  9. Add in carrots, celery, and garlic, saute an additional 3 to 4 minutes, season with salth and pepper

  10. Add in tomato paste and stirring constantly, cook for approximately 3 minutes

  11. Deglaze the pan with the wine

  12. Add in stock and chicken - the liquid should cover the chicken ¾ of the way

  13. Bring to a boil, reduce to a simmer.

  14. Cover pot and place in the oven and allow to cook until chicken is cooked through (20-25 minutes)

  15. Remove from oven, mix in chopped parsley and enjoy!


You can add in other vegetables to make this a hearty stew, such as spinach or okra. Spinach would need to be added in at the very end, while the okra can be added in along with the chicken.
